Actually Darwin never coined the Phrase?Evolution.
He did know about birds and their habits. So why are they calling his studies as studies in evolution? The Phrase evolution represents a very general word does it not?

Agnostic is someone who believes that it is impossible to know wether there is a God.
So he would have to be referring to Creation. Since Evolution has nothing to do with creation.

I think Darwin's exact theory dealt with natural selection, which is a part of the evolution theory. He didn't exact say how things could evolve over time. He just had his theory on natural selection based on his observation of birds. He saw changes but didn't know how changes came about.

He delibrately didn't mention evolution except for a passing phrase at the very end. His writings didn't touch on the origins of man or any of that.
