If you've signed a contract, then you are legally obligated to take the job offer. The only exception would be whether or not your state has a "cooling off" period for contracts, where you can get out of anything you've signed in the first few days after you sign it. A better policy after getting a job offer is telling the company that you'd like to think about it overnight, and then contact your original employer to tell them you have an offer, thus allowing them to counter before anything permanent is done.

Depends on where you live. Employment laws chane from state to state, and wether or not you signed a letter of intent or a contract.
