The most important thing: the students need to view these assignments as opportunities of fun. Creativity comes from playing around, not sitting on the desk while chewing a pen.

Before you can make the assignments more creative, you need to make your whole class more creative. This means: you'll need to introduce unorthodox way of teaching. And reward those who participate or show signs of creativity (this may have to include heckling).

If your students don't see you as someone who appreciates creativity, they will hesitate to do their best, even if your assignment is totally fun.

Make them as close to real life as possible. Better still, pick up assignment from some live cases that you come across on day to day basis. There is no better way to teach than to make is as close to real life as possible.
