Definitely ride the bike. You can't experience the country between Dallas and Vegas when you're in a plane. You'll be riding a Harley, so you have a dependable bike that you know can easily make the trip. Not to mention, riding a Harley is a whole lot more fun than dealing with a plane flight. If you decide to go the plane route, which I discourage, you could rent a Harley in Vegas to get around on. It would be better than renting a cage. The weather, except for snow and ice, never determines whether I ride or not. When riding is in your blood, there are no other options.

One thing the motorcycle companies DON'T publish(wonder why) is accident pictures, nor do they show people in wheelchairs endorsing their motorcycles. I would read a LOT MORE about motorcycling in the context of that question,
always wear good gear when you're going to get on 2 wheels.
ALWAYS. I found a video where this guy dumped his girlfriend off the back of his superbike ON THE FREEWAY. At SPEED.
When you walk on it, you think of the street as a hard, firm surface. At 50MPH, that hard, firm surface resembles nothing so much as a BELT SANDER. Cars, which we normally associate with cruise control, sound systems, and power steering, suddenly become DANGEROUS OBSTACLES from the perspective of the motorcyclist.
