You got to feel the feeling to know exactly. I think this was a phrase given by some great writer which was adopted later on.
Scientifically, I think that when we are anxious, our stomach glands secrete gastric juices or something which gives us a tingling or fluttering sort of a feeling.

Butterflies keep flying and when u r excited, the flying butterflies reflect ur mood. And when we r excited, we have no control over our body and it moves like being tickled in the stomach by butterflies.
