G.I. first appeared on soldiers equipment during the civil war....as the initials of the company that produced the equipment. Later, it started to stand for Government issue or general issue depending on who you talk to, but the mark stopped appearing on soldiers gear. Now you just see U.S. on the itchy wool plankets and serial numbers on everything.

Well, if you're referring to the military, it's General Infantry, and it's come to be a nickname for a U.S. Army soldier. Which is why G.I. Jane was such a stupid name for that movie, cause she was in the Navy, not the Army. :) Wikipedia lists several other meanings for the term, but I think this answers your question.
