Why do they refer to only 7 when theres alot more. Sooo... which are the Seven Seas ??

I don't know, but the expression is old. Think of the seas that were known by Europeans at the centuries ago (although I do not even know if the expression is European in origin - it may be Arabic as I recall it being used in relation to Sinbad's voyages in 1001 Nights.)
My guess is the Mediterranean, Black, Adriatic, Red, Aegean, Arabian and maybe North or Baltic.
