It's because they are afraid of you... cows tend to be cautious by nature. If they see you on a regular basis, walking the field, and learn to associate you with no harm, or better yet... if you carry a little feed to them every time... then they will not be so wary. But you have to do this every day.... doing it about the same time every day will help too...it will establish a routine, and the cattle will become used to it.
