It's a throw back to the days before yellow and red cards. To record bad fouls or other offensive behaviour, the referee used to just write the offending player's name in a book (he still does) but not show a card - hence the term "booking". Now we have the card system (introduced in 1976) so a booking is accompanied by a yellow card.
