The plants themselves are big, green and healthy looking, but the zuccini is turning yellow, and NO they are NOT the yellow variety. They are supposed to be dark green.

Is it too much water? Not enough water? Soil deficiency?

Your problem is incomplete pollination. In fact there was probably no pollination. The squash plant will have both male and female blossoms and you need both at the same time to have pollination and have the fruit develop. The female blossom has the fruit (ovary) attached to the blossom. If you see that you have both, then you have a problem of no pollinators (bees). If this is the case, then you can do the deed yourself by transferring pollen from the male bloom to the female. The easiest way to do this is to break off the male flower (the one on a long stem) and peel off the flower petals exposing the pollen covered male part. Then rub this on the female part of the female blossom. In a couple of days you will have an eating size zucchini.

Depending on where you live....if your temps, are extremely high this will cause you squash to turn yellow, much the same if you leave them on too long. If your stems and leafs are healthy then it is not a water or soil problem. Perhaps just the heat and you need to harvest before they turn. Zuccinni are the very best in flavor when they are about 5 inches long, after that they start forming large seeds inside and the outside becomes bitter, although large ones are fine for breads and such the younger ones are the best for eating. There is not much you can do to lower your temp in the garden unless you are able to provide some shade in the afternoon. I hope this helps. good luck and God Bless
