Both terms refers to the animals:
A varmint is a repulsive animal, that maybe you would destroy in defense of crops/livestock/human beings.
A critter es a cute animal, that you may like or not, buy it's not repulsive to you.
Remember a animal like a worm, can be a critter for some persons, but for others is a varmint.

The difference between the two is kinda complicated. A varmint you would just assume kill and leave by the wayside, and a critter may be tasty, or you may like to make something out of it's hide. I think a critter is a nickname for an animal that wont do you much harm, and a varmint will cause you trouble.. Have a nice day!

A varmint is an animal or a person that is obnoxious and troublesome. A critter can be a person or domestic animal (like a cow or a mule) and usually is not being called this with any negative connotations.

Critters can be useful. Varmits, by definition, are not useful at all.
Critters can be cute. Varmits are not cute (except sometimes as pups).
Either one can be real good eatin', though.
