well the sun is shaped like a circle, automatically u know a circle is a familular object. usually used for a persons face, and kids always draw people with smiles. thats my theory.

If you look into child psychology, it has been noted that children associate the sun with their father or mother (can't remember). If the sun is happy, the child is having a positive interraction with the parent. Sometimes a psychologist will ask the child to draw a house, maybe suggesting a path, and putting a snake there. Depending on how the child draws the path where he puts the snake, if there are clouds, if the sun is happy or not, the size of things, etc will mean something on the cognitive level. The subject expands vastly from a happy sun.

circles and lines in them to represent faces are one of the earliest figures that kids draw other than stick figures.
faces and eyes are the first thing that a infant focuses and recognises
so it is but natural that kids draw a circle with a happy face and since the sun, moon and the sky are some of the big things a kid sees when he looks up and is shown pictures of them by eager parents, thats what a kid draws and we interpret it as a the happy smiling face of the sun.

because when your a kid, things are so simple. and the simplicity of the warmth of the sun makes you happy, as you grow you lose that simplicity, and the little things don't bring the joy they used to.... or because the suns on cartoons and games have a smiley face.
