First of all, no scientist will agree on what exactly a dream is. Whether a dream is a manifest of your desires or just random sparks in your brain firing that your brain attempts to make sense of, we don't know.
Since people see in color, the images of themselves and others are in color. So it makes more sense for your desires or random sparks to be in color. Sure, maybe if you watched a black and white movie, you might dream in black and white. It just whatever color your brain associate to whatever you dream.
