You can tell you have recently ovulated (released an egg) by charting your basal body temperature. You can tell you are approaching ovulation by charting your cervical fluid. The only way to know for sure precisely when you are ovulating is to do ultrasounds every few hours around the clock for several days.

Actually you would be releasing an egg, not producing it. You are born with all the eggs you'll ever have.
I can always tell that I've ovulated by an increase in cervical mucous. Most women ovulate 12 to 16 days before their period starts, so look for a change in cervical mucous during that time.

you could chart your basil body temp
you take your temp. with a basil body thermometer (available at most stores) before getting out of bed (at the same time everyday) and write it down if you ovulate it will go above 97.7 about 14 days before your period starts (if you dont it will stay below)
