I think it's a reference to his intensity in the ring, and the fact that in a lot of promo videos, he looks like he's roaring to the crowd. In fact, the PPV poster for Armageddon 2005 has him making a face where he looks like he's roaring like "an animal". It's a cool nickname, to be sure.

Its a reference to the Wrestling Gimmick of "Man Beast" which is an old gimmick that has been used and adapted for many years. A "Man Beast" is a wrestlers who's gimmick is that they wrestle with an Animalistic fury, and high intensity in the ring.
