If,as claimed, flies have incredible eyesight in almost any direction, why do they struggle to find their way out of a room with an enormous window left open?

they fly by sunlight so the go to the direction the sun is coming from also the have very small brains so they ain't very good at problem solving :P

I think their co-existence with windows and homes with windows is too short in terms of evolution to get adapted well.

I think its because flies do not exactly know what a window is ?

They don't have good vision, not in the sense we do. They can however detect movement very effectively.

They have photosensitive compound eyes which have poor resolution.
