So they are easily seen. Most Post-it pads are stuck on white papers to furnish additional information. If they were also white, they would not stand out and see easily seen. Yellow is any color of light that stimulates both the red and green cone cells of the retina and therefore it "catches you eyes". That is why you see so much yellow in the transportation industry. Such as Yellow lines on the sides of roads and yellow school buses.
The majority of Post-it are yellow, but now come in many "designer" colors.

Usually a colour to contrast with the colour of the Pen Ink.
Blue on yellow can be seen more clearly.
Other post it notes do come in various colours, as do pads and reminders.
Colours make them stand out from white paper to attract the eye to view it.

maybe because most pens have black or blue ink, so they stand out more on yellow paper. White paper would look like all other paper and yellow is bright. plus, a lot of signs are in yellow and black aren't they?

Yellow is a happy color and triggers the intellect. Rather than other colors that triggers emotions or calms you down.
