If you planted it in a trench or depression in your garden you can pull soil around the stalk as it grows. This will greatly increase your yield. You can still do this somewhat even if you planted it on flat ground, mounding the soil around it. Or just let it grow.
If you planted an early variety in April you might start harvesting now. Dig up a little around a small areaof the plant and feel around for potatoes. This is a fun plant to grow because it's easy and has a good yield.
Otherwise, when you see the the leaves starting to turn yellow you know you can start harvesting. Or, let the foliage die back completely and then dig up your harvest. The potatoes might be afoot away from the plant and a foot and a half down so dig away. Careful not to cut potatoes with your shovel though your bound to hit a couple. Feel through the dirt for small ones too. They're good.
If the potatoes grow too near the surface they might turn green from being in the sun. Discard these as they aren't the best for you.

let it grow, after a while the roots will sprout new potatoes, dig them up and eat them, otherwise let the new potatoes sprout then replant them and grow a potato crop

That depends on when you planted it. Normally you dig them up around late summer or fall.
