Well, flowers are always a nice gesture, but not very original.
Try something like a romantic greeting card, maybe. Most guys don't think of that sort of thing. Even better than that, would be to write her a love letter. It's a timeless art form and becomes even more priceless if it's something she'd never expect from you.
Another good one is to make her a mixed tape/CD of love songs that tell her how you feel about her. Only use songs with male vocalists, so she can imagine you singing to her. Just that you took the time to do such a thing will astound her and touch her heart so much.
Something I did for a boyfriend once was give him a gift-wrapped push-pin. (You could also use a safety pin or straight pin.) I took him out to his car that I had filled with a few dozen numbered balloons. Inside each balloon was a folded piece of paper that contained the line of a love song I chose. (Number the balloons in consecutive order according to the song lyrics.) You don't have to use a song, though. Each piece of paper can just state one of the things you love about her, and then you wouldn't have to number the balloons, either. She'll then use the pin to pop the balloons and find all her secret messages!
Being romantic doesn't always have to cost a lot of money. There are lots of ways to touch a woman's heart without going broke.
If you're worried that you might not be creative enough, try getting her something off her Christmas list, and just giving it to her early. Maybe her favorite chick flick on DVD.... then make her some popcorn and watch it with her. Any woman will become putty in your hands, if she thinks you really care about what she wants to do, then take the time to do it with her.
Always remember that the best way to surprise your girl, is to do something that she'd never expect from you in a million years. Good luck!

I edited this so you better read it okay. Now that I know you have been together so long. I need to ask you a question? Is this a close relationship? Because after two years maybe a ring would be appropriate. But like I said before. I needed a break and some rest and my (future) husband made me a tape of great songs we both like to listen to. He put it in my car while I was at work and honored my wishes for a day of rest. I was so taken by his thoughtfulness I called him anyway. When he took me to dinner the next day He had ordered flowers and they were waiting on our table. I did not expect that. Not because they were flowers but because they were there before we arrived just for me. Try a singing telegram. But mostly make what ever it is personal. Try to remember your conversations, things she likes, and get creative. When she say, gosh I wish I could do that or could see this. Try to make it possible. Where would she like to go in the world? Take her there, but not literally. create it in your living room or hers or by taking her to a restaurant from that country and tell "Someday I will take you to the real "place" ? Find out why she wants to go there, what she would buy or see. Maybe you could get her a gift from e-bay or somewhere that resembles that product or place. Good luck

Clean the house, make dinner (hold the desert for later), do the dishes, draw her a nice hot bath, give her a massage, then share desert with her, tuck her in bed and allow her to rest unless she has now become aroused by it all. If it does happen, don't be selfish about it and think it's all you. It is all about her! Do what she likes and wants making sure that all her needs are met first. Then tuck her in and go take a cold shower to cool off. Who knows, she may just wake up in a good mood and jump you! Good luck and have fun!

There is no no reason or just because, surprising a woman out of the blue with a gift will clearly say you like her - a lot. and its very cliche but flowers are always appreciated, or any gift you put some thought in. Don't overdo it though, for if the gift is too big and expensive it can easily make her uncomfortable.

FLOWERS, A CARD, A GIFT CERTIFICATE, COOK A MEAL FOR HER ( SURPRISE HER WITH IT ), TAKE HER OUT FOR DINNER, IF SHE HAS SMALL KIDS KEEP THEM FOR A COUPLE OF HOURS TO GIVE HER A BREAK , BUY SOMETHING YOU KNOW SHE WOULD LIKE ( A PICTURE, WHAT NOT, ETC. )

make her something that you know she likes. like if she mentions that she has a craving for mexican, surprise her with fajitas for dinner. or if she likes cupcakes, make cupcakes! it's a great ending for a long day.
