Well if by "work" you mean to write or draw, I think I have the answer:-
Try holding a pen or pencil exactly 90degrees (perpendicular) to the paper on a plane and then write your name..... You will find it very difficult.
Reason- considering that we stand or sit erect in vertical to position, our arm extends in a vertical position and the force component on the paper is thus cos "theta" if "theta" = the angle between the paper in the horizontal plane and the pen. If "theta" is 90degrees, cos theta= 0 and hence the force component of the pen on the paper negligible. As the angle decreases, the force component increases. Therefore we tend to slightly incline a pen/ pencil while we hold it to write/ draw.
2 things happen when we incline the plane on which we are working-
1. Based on the inference above, the angle of the arm extending to paper is increased considering our arm still extends in horizontal position and subsequently the angle between paper and pen also automatically reduces without having to tilt the pen in the hand. We begin to write with lesser effort.
2. Inclining the plane provide better visibility of entire plane considering that we stand/ sit vertically. This also avoids a situation where we may need to lean over to extend our vision or hand to an entire plane and thus tiring our backs, necks and shoulders out sooner. this is especially useful when you are working on a large plane area like canvas, maps, engineering or architectural drawings.

The load is split into a horizontal and vertical component. work has to be done only against the horizontal component

Its basically just a ramp and you know how much easier it is to push and pull stuff up a ramp than sheer lifting.
