Gentiles were anyone who wasn't a jew. As far as I know, today, anyone who is not a Jew is a gentile. You could check out these links if you want more info

The gentiles were the non jews who didn't know about Christ. Today anyone who doesn't believe or know about Christ is probably considered a gentile. Somethin like that anyway.

I have looked at the above answers, and notice the lack of understanding. Also you're asking two questions, most folks are only answering one.
God made Abraham a promise that the promised seed would be through his bloodline. Abe's son Isaac had two sons: Jacob & Esau. God changed Jacob's name to Israel (God's peace). Isreal had 12 sons, their children and descendants are Israel. Everyone else was considered a gentile. Being gentile is not a culture or civilization, it's just not of the commonwealth of Israel.
There really is no such thing as a gentile now. There are only two types of people: God's children & everyone else (I Jn.5:12, Rom.8:14).

Ephesians 2:10-15
For we are his workmanship, created in Christ Jesus unto good works, which God hath before ordained that we should walk in them.
Wherefore remember, that ye being in time past Gentiles in the flesh, who are called Uncircumcision by that which is called the Circumcision in the flesh made by hands;
That at that time ye were without Christ, being aliens from the commonwealth of Israel, and strangers from the covenants of promise, having no hope, and without God in the world:
But now in Christ Jesus ye who sometimes were far off are made nigh by the blood of Christ.

Gentile simply means (in Jewish culture) someone who is a non-Jew.

Gentile are considered to be those that are not of jewish decent-the others.

Gentiles are/were those who were not descendents of Jacob, so basically non-Jews.
