Specifically I plan on staying in St. Helena....i'm already planning to do the hot air baloon ride and the wine train...also i need to know about any romantic B&B's.........please help me out...thank you

you can also try a spa in calistoga. There are lots of spa there, and the special treatment there is mud spa. there are private room for 2 for spa treatment, can be very romantic.
also, there are many nice restaurants in napa area. a nice dinner can be romantic. my personal favoriate are "mustard Grill" and "CIA".
regarding to B&B in St. Helena, Adagio Inn is the best.

Go to Greystone, it is owned by the culinary academy, and you can get a fantastic meal. It is a bit pricey, but well worth it.
Take the Napa Wine Train. It is a couple hour roundtrip train ride with a wonderful meal, and beautiful scenery.
Other very popular Napa outings:
-Day spa (massages, facials, etc)
-Hot Air ballooning
-Bike rentals
-Wine tasting

My parents went to Napa so I suggest
-googling famous vineyards w/ wine tasting
-just walking around a vineyard and talking. Sounds simple, but the attention would make her feel good.
-once again google great resteraunts to see what is around ur hotel.
-buy 2 bottles of wine the year you two started going out or in the year she was born in. If it is the relationship bottle keep it somewhere where u can always see it and have her do the same. That way u can remember ur trip!

Auberge de Soleile is the nice place to stay...
check out the schramsberg champagne caves... make a reservation to go there... and... go to Calistoga they got some great spas... mineral mud baths etc.......
for a small intimate wine tasting go to swanson, again, reservations required... attached, find the links ..... have fun!!

Go to the Marin Headlands just a few miles down 101. It's chilly so you can snuggle.
The tour of the Beringer facility is nice and informative.

My fave restaurants in Saint Helena are Terra and Martini House--you can eat outside at Martini House and they have awesome food.
