They stock store shelves at night with merchandise so it's ready to be sold in the morning when the store opens. Typically the shift lasts from 11pm to 7 am. So yes, they work at midnight.
It depends on the store whether or not 16 year olds can work. But I think typically you need to be 18. Althought if you work until 7, how are you going to make it to school on time? And do you want to work 8 hours then go to school for 7-8 hours and then have to sleep as soon as you get home from school? You wouldn't be able to go out with your friends or anything after classes. You also wouldn't have much time for homework because you would need to sleep from 3 or 4 until 10 or so (which is only 6 hours of sleep anyway). I wouldn't reccomend a night job unless you are out of school. It would be too hard on your system and schedule.

Yes, depending on the store, when the store closes, or as in some 24 hour stores, when it is no longer busy, they come to work , unload trucks, put stock on carts, push or carry it to the shelf, make prices if needed, restock shelves and the such.
Hours may be full time or part time, normally starting work between 10 pm and 1 am and working till early morning.

they are the backbone of the retail world and probably the least noticed because all of their work is done at night when the stores are closed... and you would want to be a single person if you choose to do this because you have absolutly no life ....
