There are a lot of nicknames out there... For example: honey, darling, dear, beloved, love, angel, beautiful, sweety... :) It's not easy to pick one out just for your sweetheart. You can use any combination of the words that make her feel special and make her smile looking at you when she'll hear you say that :)
Or, if you'd like to say something new and out of blue... you can do what Sylvester did in the cartoon: He comes over to the Tweety's cage, looks at the canary and says "Hellooo brreakfast" (my favorite part in the cartoon) :) You can say the same thing looking at her--it'll make her smile and tell you the same thing later on. (You can also use words: lunch, dinner, snack, etc.) I know, it sounds silly... but sometimes you say something silly just to make someone either smile or laugh, which is always a good thing :)
