My son and I are working on the Titanic model (our first model, it was a gift) and we're wondering if we should paint the white pieces white even if they are white already, meaning do we paint white on white plastic.....dumb question, I know, we are novices, but we want it to look good, it's gonna take forever to do :-)

You certainly can, if you think that by not painting the pieces they will look vastly different from the rest of the model (for example, they're flat but the rest of the model is painted glossy). But for your own sanity, if there's no compelling reason to paint the pieces, I wouldn't!
