One night, really late, take a can of gas, go into their yard, and douse the lawn in the shape of a cross. Light it on fire, ring the doorbell, and run!

You can try a bunch of things but most likely they'll suspect you.
Unless you want to see your self on Cops (or Dateline or etc), probably should get to know the guy and find out what's his beef. Either way you have to live next to him (or move).
Wars between neighbors usually end up ugly. A dude at my dad's work shot his neighbor over a dog p*ssing on his newspaper (had no priors as far as I know). Now the guy is divorced and been in jail for 15 years (and counting). Luckily the guy was old so he didn't turn into somebody's "wife" in prison.

I have the same problem as your as well. You type a letter, stating that their sprinklers are bothersome to you and that it went directly on your property; to encourage them to fix it. Give them 30 days to correct the problem. If not corrected after 30 days, you tell them that you will file the complaint with the city (or go to the small court and they pay the legal fee). Be sure that your letter is certified by the Postal Office.
This method will give your neighbor a wake up call. I strongly suggest BEFORE you send out the letter, take a picture or videotape of their sprinkler on your lawn. This way, you will have proof for legal later on, just in case.

The best subtle way to stop your neighbor from watering their lawn is seed their lawn with some weeds. Tried and proven. For a different reason though. I went for mint, cause that **** grows like crazy, very difficult to get rid of and I just happened to love mint tea.

I agree with "me". Why retaliate? It will just get worse if they discover who is annoying them.
They sound like total jerks and there is nothing better to turn them around except to kill them with kindness. It has worked for me many times. I have made many a good friend out of an annoyance.
But if you are determined to piss them off real good I like the tuna fish juice in the flowerbeds one the best.
Then after you have had your fun go on a quest to befriend them. Some years later you could all laugh about the tuna fish trick.

True story. I had a nibby neighbor who after dark rang my door bell to tell me my attic light was on."Thanks for telling me.Must have forgot to turn off when I was up there" So, everynight before I went to bed I would turn on the attic light. She never mentioned it again, but made me chuckle. No harm done.

Just do something rally ugly to your house and that will make their house look scary too. Like leave a really junky car parked in front of your car and it'll look like they live in a shady part of town. Or mail them a singing telegram to sing something really dirty and make it seem like their boss sent it. Or, you can always grow some really weird looking bush in the front yard and shape it strange.
