The movie is ROCKET GIBRALTAR with Burt Lancaster as the old man. It was made in 1988 and the plot you've described is basically what the movie is. I hope this will help. I'm a bit of a film buff.

"Rocket Gibraltar" 1988. It starred Burt Lancaster. He used to tell his grandkids that he always wanted a Viking funeral. When he dies, while he adult children are arguing over how to plan the funeral, the grandkids get together and give him what he wanted. (A Viking funeral is for a warrior or chief - they build a pyre for the body, set it aflame, then send it out to sea, where the warrior's heart lies.)
