This actually is something I've often wondered. What is the name given to the plastic ends of shoestrings?

Its called an egglet...not sure if I spelled that right though.

They actually don't have a name. It's simply the end of the string. Plastic is added to keep the string from unraveling and the make it easier for lacing. My father has owned a shoe store for 40 years.
