It is only Man that makes time. Without Man, Mother Nature would not live a life dictated by the boundaries of time. Essentially all time does is limit & restrict us. The living things live according to the rising and setting of the sun, 2 sides of "time": day, and night. However beyond that, hours, minutes, seconds are all man-made concepts and principles.
Timing is therefore critical only to the extent that it applies to the human race. In relation to the rest of the earth, vegetable, mineral etc, time is critical only in that it indicates growth and extension of life.

You could rephrase that question to ask- why is the sequence of events critical. The answer is, the sequence of events helps us understand cause and effect. Getting the sequence of events correct is what makes cause and effect possible. Since most effects have mulitiple causes, it's important to get all of them to coincide in order to select the perfect result.
It's like playing Super Mario Bros. You can have Mario jump all day long but if you're not in the air when that turtle comes at you it's not going to help you at all.
Timing is, indeed, critical.
