I had lots of good ones, and plenty of bad ones, but my favorite was Mr. Gursslin, 6th grade World History teacher.
He was interested and enthusiastic about his job, and he wanted each one of us to make informed decisions and think about things critically. In fact, he didn't let us read our history book b/c he said it was really biased, so he printed things off the Internet for us to read before class. These articles often were written from the points of view of other countries, so they brought up a lot of dilemmas I wouldn't have seen otherwise.
He dressed up a few times, too - once as Eleanor Roosevelt even!
Dedicated, caring, and intelligent, he is remembered by my former classmates and me, and what he taught us has influenced us in our professional, economical, and personal lives.

Schultzie, my driver's ed teacher (back when they still taught it in High School). He made sure that each of the girls he was teaching, knew how to change a tire, stop a car that had died while driving, stop a car without brakes, steer thru into a skid, etc.
He was the only instructor to do this. He even discovered that one of the girls didn't know how to pump gas or check the oil, so as to not make her feel singled out, we all learned how to do that as well.

My favorite teacher was my 4th grade teacher, Mrs. Phyllis Sargent. She read to us- wonderful books, played with us at recess when other teachers stayed in the classroom, worked with us to understand differences and not be judgemental, had a great sense of humor and was filled with energy. I heard, years after I'd had her, that she committed suicide and it crushed my heart. Bless her memory.

Mine was Mr. langer a history teacher in middle school. Incorporating the time period he would dress and act the part of each time in history. He would come to class wearing a redcoat like the revolutionary war, he would dress in a ww2 outfit like the soldiers did in WW2, he would dress as a bill clinton the list goes on. And when he was in class we didnt refer to him by his name, but rather who he was protreying during that part in history. pretty badass. I miss it.
