you should not...this is a question you must answer for yourself...running a restaurant is a performance driven event...what you have to bring to that is your own and it does require understanding what the competition does, what successful people in the industry do and then deciding on what you will and won't follow, what you can and cannot do and where you need to find what you need to run things...you will not be able to do it by yourself...it requires a team...and it requires you to know yourself pretty darn good, if you want success..

You need to be more specific. Are you starting a new resturant? Are you the owner? Are you the manager? Are you the maitre de? I suggest going to Amazon.com or any book store and purchase a book on resturant management to get started.

Get a decent chef and back up team. Get a decent waiting team, and get a simple yet effective menu. Base yourself in a vibrant place, and make sure you're not pricing yourself out of the market. Check for niches in the market in your area.

Find a place, hire some cooks, design it...get all the must haves(recipies, tables, chairs, etc.), hire workers, and prepare to get yourself a pain in the brain...
