The plants will start turning brown and dying back. You can eat them as early as they are big enough. We like to dig down under the plant and get small potatoes as well as waiting for them to get their full size.

You dig around a few to see how big they are. Potatoes don't get "ripe" so to speak - they may be eaten at any size. You harvest them once they reach a size suitable to you.

You can harvest anytime; the longer you wait the bigger they will be, but I urge you to try some when they are golfball sized. Called new potatoes, they have the nicest texture and taste.
