How do you say the band's abbreviation? Is it HIM as in "him and her" or is it H.I.M as in REM? I'm a new fan and don't want to sound stupid and call them the wrong thing.

It's HIM like "him and her". But me and my friend always say out the entire acronym for HIM and AFI.

It Really does not matter because if you are a fan they will welcome your support even if you do not know the proper acyromyn of their name
