I like to keep some Leerdamer Swiss on hand to nibble on a regualr basis. It's from Holland and very much like Norwegian Jarlsberg with a slightly delicate, baby-swiss flavor. My favorite, however, is Parrano. It's also from Holland. It's made with a Gouda recipe but, for a twist, started with the enzymes used in Parmesan. The result is a slightly spicy, pineappley Gouda/Parmesan hybrid. it's a great table cheese and fantastic melted on a sandwich or in macaroni and cheese.

I love all kinds of cheese but my favorite kind is pepper jack!!! It's sooooo good! Especially when you make a sandwick and then you toast it and it melts....mmnnnnn....it's sooo good!!!
