DISCLAIMER: Most of the actors that I have worked with who have been based in either area have originally come from other places and have been willing to work outside of their home bases. My experience is also not incredibly extensive.
The actors from New York tend to be a little tenser, more charitable, and focus on their own craft. There is more call to sing in New York, but there are a number of television series and movies that are filmed in New York. They are often paler.
Actors from L.A. are more approachable, but private at the same time. They talk more about money and cars and food. They are more business savvy.

A broad generalization is that actors go to NY for work in theatre and to LA for work in film. Few are native to either location. Almost all work "day jobs" and spend almost all their free time in workshops and auditions

NY actors are more theatrical, LA actors are more focused on movie and tv.
