Because that is the color of the National Team, called "Azzurri".
That is an historical tradition: before the creation of the Italian Republic, the Italian Regal Family (Savoia) had color "azzurro" (kind of blue) in their flag and that color was adopted by the soccer National Team to respect the Regal tradition.
Since then the color has been kept in the Italian shirt, even though it is not a color present in their National flag.

NOTE: the Italian flag is green - white - red and NOT red - white -green

it doesnt matter, it depends on who manufactured the uniform
it like holland and their oranje uniform or venezuela and their wine color uniform
