Levi was the founder of the Levite tribe in the old testament. in the gospel of Mary, i believe it would refer to Matthew, a disciple of Jesus, whose full name was Matthew Levi

I have not read the Gospel of Mary but in the canonical Gospels, Levi is the Apostle Matthew, the tax collector. Levi is also the name of one of the Twelve Patriarchs, the one that was the priestly tribe. (Genesis 29:24)
