Seems like I always ask myself this question when eathing out "Does this chef/cook really think this is the best this could taste?" I would be embarresed at most places. I would never send out anything I did not think tasted better than anything anyone else had ever made. Why is this the case?

As a Chef you learn different ways to cook ,and yes most Chefs think there way is the best ,food preparation is a challenge we try to compete with others and even some times with our self's.I always thought I made the best Hungarian Goulash because The recipe's was handed down from My Grandmothers Grandmother.And the only way I ever sent out food was if it was satisfying to me,<<<>> that is a insult to all CHEFS ,cooks prepare foods that are premade

Your question should not be directed at the chef. The restaurant owner and/or manager supplies the food to be cooked and the recipes to be used. A good chef will be able to get into the best restaurants and have more control, and be able to work on his/her own dishes, but an average chef will not have as much control. In the restaurant business, you really do get what you pay for, and we really have a lot of control because good restaurants will stay and bad ones will be put out of business pretty quickly.

Cooking is a scientific art form. I believe most Chef's probably put their heart and soul into their dishes, especially their signature ones. Unfortunately, restaurants are a business, and the artistry of the Chef may become hindered by management. The best restaurant's are probably the ones that are owned by the Chef's themselves, that way, their artistic vision isn't compromised...You can't expect 4 star dining at "Denny's" anyway :)

Most experienced chefs know better because they have a real understanding of the importance of quality ingredients and also know that the place they are working does not pay for them to use them.
