it really depends upon time of year and how you route it and what you're driving.
If you go I-40 West to I-25 South at Albuquerque NM and Catch I-10 West at Los Cruces NM you will be driving through the tornado center of America and going up hill. once you are West of Amarillo the weather gets a lot better except in winter and the downhill run from Santa Rosa NM can be tough on trailers and slicker than hell in winter. The run down I-25 follows the Rio Grand amd you are in mountains. The stretch of I-10 to Tucson is Pure lower Sonoran desert which this time of year means triple digit heat.
The alternative is I-40 to Little Rock , I-30 to Dallas then I-635 to I-20 and onto I-10 West
I would use 40,25 10 for two reasons the weather is better and there are no cities to navigate.

I haven't made the trip from TN to AZ but I did make a trip from FL to Vegas and going through the Texas/Oklahoma/Arizona area is very flat and very boring. You can travel an entire day and see basically nothing except for towns called "Muleshoe" or something to that affect. Sometimes you will see wind farms in the distance and think you will be able to see them up close in about an hour. After 8 hours they seem to be the same distance. So bring a lot of coffee and entertainment for the kids if you have them.
