A swami I once had a discussion with said, "Omniscience does not mean 'God knows this and God knows that.' It means that God is the essence of knowledge." In Vedanta (Indian philosophy based on the holy texts of the Vedas), God is described as being "Sat Chit Ananda" (Existence Awareness Bliss). That is as close to a definition as you will get, as divinity is widely acknowledged to be beyond human understanding.
While an embodiment of divinity might think about something, or appear to do do, thinking is a function of the body/mind, an aspect of Being in manifestation. Unmanifest divinity, or Sat Chit Ananda, can be experienced directly by us, and by those who have done so and attempted to describe the state, it has been generally described as being beyond thought. Not that thought is unnecessary, but that no thought arises.

Anybody having brain will continue thinking because brain cells have only to "Think" and order the body to act. Being can not know every thing because this universe extends from infintesimal to infinity and there is no limit to either of these two.

An all knowing being would be an eternal being who has all thoughts at once being ordered from the most basic to the least basic unendingly.
