Im going to do a off ebay trade with someone from canada, im in the Us. but i need to have a legal document for the trade because its worth some money. What do I do?

write up an agreement outlining the details of the trade, and include a clause in it specifying that, in the event of a dispute, the dispute will be governed by the applicable laws of the United States of America. Have the other party sign it before conducting the trade. You can probably get some simple contracts to this effect from Office Max or Office Depot.

What do you mean, off ebay? Is this a deal through ebay that they told you let's do it off site and save money? If so, then the following:
1. Probably illegal.
2. definitely unethical
3. likely a scam.

Ebay sets policies for a reason, and that is to protect you from scum that steal your money. Don't be had.

Escrow attorney or service : ebay can be brutal after a bad deal ,and thats nothing compared to the people /crooks you can be dealing with. Buy escrow insurance between you and the party Its a safer way of dealing, or consult an attorney first.
