With each song, more or less it is an emotional description. So, you can make any song interesting if there is real feeling and the right wording along with musical composition that conveys those emotions. you want to take the listener to a certain place.
You can make a song about a dog interesting if it's done right like "Martha my dear" by the Beatles. I think the Beatles are a great example that a song does not necessarily have to be about anything to be enjoyable and the lyrics to be really good. Even if you have no idea what it is about, you can still speculate.
You never want to make a song too obvious or sound like you are taking yourself and your song too seriously. that is boring.

I think heartbreak, great loves, looking for love, loves lost, cheating, falling inlove songs always get the greatest attention.
personally i like 'stoned' by Dido and freedom songs like Bob Marley

There are a lot of songs that talk about love. If you are referring to what you should write about for a song, write when you are inspired and write about something you care about.
