Your answer might be found in the very fantastic and detailed book of the Lewis and Clark expedition entitled "Undaunted Courage" by Stepen E. Ambrose, published by Simon and Schuster in 1996. It is an excellent book just to read and enjoy the details of the expedition itself, and I wouldn't be surprised if the recipe you want is in there. I read it back in 1996 or 1997 and so my memory for that very specific item is lacking, but remembering the details the book went into, from the political and economic preparations for the trip all the way through to it's conclusion, I would not be surprised if you found your recipe there.
