The word is "extract".
Alcohol containing products such as wine, champagne, whiskey, beer etc are made from food products having a lot of carbohydrates like rice, wheat, barley etc. What differs in the wine, whiskey etc. is the amount of alcohol or more precisely Ethanol or C2H5OH, it is obtained on fermentation which breaks up the long starch chains into simpler ethanol molecules.
Fermentation is an oxidation reaction, if allowed to continue, C2H5OH is oxidised to Acetic or Ethanoic acid CH3COOH whose diluted form is vinegar.
