We lost our original skeleton key/bit key to an old hutch we have, and have tried several other bit keys but none seem to work!

You can try to pick it with a paper clip or can you unhook it at the hinges? Then take it to a locksmith and see if they can make a key. Otherwise call a locksmith.

How would you open an old lock on a hutch without the original bit key?

I bet if you looked hard enough you would find another key that will fit it. But I could be surprised. I don't think that there were lock that were too sophisticated that one couldn't pick it somehow. Is the lock on a button? try pushing the button, maybe its already opened. How about if all else fails taking off the hinges. Maybe the freakin key is inside.

Try using a short skeleton key, They are a bit different than the long ones. Good luck. You can pick them up at flea markets or antique shops easily.

if it has a pad lock all you need is 2 hammers lay the lock on the flat side of one of the hammers and hit it really hard with the other,sometimes it will just pop open and most times the lock can be reused but it will have some dents.
