Ever After. French Kiss. Also check out Amelie (French film) if you're old enough to stand visible sex and nudity, and very dirty thoughts.
A lot of major movies also make good "chick flicks," like Crouching Tiger Hidden Dragon, or Titanic. But for goodness' sake don't get anything that's a mere teenage summer movie! They suck.
Oh, and if you're looking for a "girl power" type movie, try Whale Rider, Bend It Like Beckham, or even Contact. They're not all that heavy on the romance, but they're still excellent films.

Fried Green Tomatoes, Lace (mini series, but awesome), Steel Magnolias, Murphy's Romance, Willow, The Joy Luck Club (all time favorite), Divine Secrets of the Ya Ya Sisterhood, Labyrinth (David Bowie!), Serendipity, Must Love Dogs, Sleepless in Seattle & Shrek. They're all I can see from my chair...

When I was younger a girlie night sleepover was not complete without watching Dirty dancing and Top Gun - throw in Beaches an dyou have a sexy man drool / girlfriend sob fest
