A dried tomato is a tomato that has dried !!!
It has the same vitamins etc as a hydrated tomato.

just tomato's that have been left to dry out in the sun.
I have a great photo from when i was in Italy of about 3 tables just covered in tomatoes and left out in the sun- probably not very hygienic but still better than all that factory made crap
Same vitamins as a regular tomato, i think...

You can dry tomatoes in a very low temp. oven, or in a food dehydrator. You can find them in grocery stores too, usually they are submerged in a olive oil and herb mix.
They retain a lot of vitamins A,B C.
I've made them from tomatoes I've grown, and they are great with a sprinkling of italian herbs. I do not like them in oil, so prefer to make my own. My kids love them sprinkled on sandwiches.
