Do you mean the 19th century art movement? If so, the classic on it is "Symbolism" by Robert Goldwater.

I would also throw in Man and His Symbols by Carl Jung and
The Power of Myth, Bill Moyers with Joseph Campbell...not to mention Campbell's works such as The Hero with a Thousand Faces.

If you are studying Symbolism as a literary movement, you pretty much have to read Charles Beaudelaire.

Your question is overly broad. Symbolism in general has its experts in every field conceivable. Symbolism in myth? Joseph Campbell. Symbolism in poetry? Beaudelaire, Rimbaud, or on to Yeats and others. In theater? Maeterlink. And so forth.

If you look for it, you will find figurative language (symbolism) everywhere, from cheap advertising to clasic literature.
