I am concerned about safety because of the horns, and also wondering about the taste of the milk

Note: Both bulls and cows have horns in horned breeds of cattle.

All cattle with horns are very much aware of their horns. Scottish Highland cattle are also fairly good in their disposition. However you could dehorn the calves if you were that worried about it. I would say that the Scottish highland is not most known for it milking abilities such as the Holstein or jersey breeds. They do have a high butterfat content, so they milk have a more buttery and creamy flavor. They are more of a meat breed known for their susceptibility to harsh climates.

From the three breeders I have spoken to, all milk their cows, two actually process the milk into a cheese, one uses it for ice cream. The reports I have seen are that the results are the consistency is a richer taste than that of a Jersey. All cows were very docile, but it was due to working with the cows as with all the heads of cattle they owned and setting up the heirarchy with their herds. I am looking at starting a small farm in 5 to 6 years when we retire back to Minnesota, and am studying up and doing all the research I can now before we get started.

Ben Stiller says "you can milk anything with nipples". But seriously, I'm not familiar with that breed. As long as it's a female, your chances have got to be greatly improved.

Horns are normally an indicator of a bull, not a cow but you can check out the website. The milk is high in butterfat and tastes differently.

I'm sorry to tell you buddy, but that's not milk you drank. Might want to try some mouthwash or something. And try to forget about it.
