When I want to dry some items of clothing I don't want to use the hottest setting. Which one should I choose?

Hotter setting--Normal. Permanent press--cooler

Normal is hotter. Permanent press avoids too much heat which causes wrinkles.

If you want to avoid Shrinking, use Air Dry- dry with room temp- even better, use the dryer on heat for about 5 minutes to remove wrinkels, then take the clothes out and put on Hangers to dry. No shrinking that way.

NORMAL: USE IT FOR TOWELS, JEANS, BEDDING
Permapress setting for all else you don't want to fry or cook. Use cold water too.
Also, don't use too much soap; it's hard on fabric and a gimick to make us consume more.
